Lemon Blackberry Pound Cake Bars

Well, it’s officially spring here in Arizona, which means we’re about two weeks away from being unable to turn on our ovens again. It’s OK, it will only last until November. Only eight months until you can eat something other than a salad. Suck it up, soldier. This is the trade off for not having to shovel snow.

I don’t know man, after living in New England, I think I’d take the dreaded snow and an enjoyable summer over this nightmare. Don’t get me wrong, I love my salads, but I’d rather eat them when I’m not sweating.

I’m soaking up the last few days I have left before the hellish nightmare begins. Starting with these Lemon Blackberry Pound Cake Bars. I’ll probably make eight batches of these and put them in the freezer. One for each month of the nightmare. This might be the best survival strategy I’ve come up with yet.

Blackberry Lemon Pound Cake Bars

PREP TIME 5 minutes
COOK TIME 35 minutes
TOTAL TIME 40 minutes
SERVINGS 12 bars

INGREDIENTS

Wet ingredients:

  • 1 cup minced sweet potato raw
  • 3 eggs
  • 2 tbsp coconut oil
  • 3 tbsp coconut sugar
  • 1/2 cup applesauce
  • 2 tbsp lemon juice

Dry ingredients:

  • 1/2 cup coconut flour
  • 1/4 cup cassava
  • 1/2 tsp baking soda
  • 1 cup blackberries

INSTRUCTIONS

  1. Preheat oven to 305 F and line an 8x10 baking dish with parchment paper
  2. In a food processor, combine minced sweet potato, eggs, and coconut oil until smooth, about 2 minutes. Add in sugar, applesauce and lemon and blend for another minute to combine.
  3. In a large bowl, whisk together all dry ingredients (except blackberries) until well combined.
  4. Make a well in the dry ingredients and pour the web ingredients in the middle. Stir to combine. Batter will be thick as the coconut flour absorbs, but try to not over-beat. Fold in the blackberries and let the batter stand for 5 minutes.
  5. Spread the batter in the prepared dish. Bake for 30-40 minutes, or until a knife comes out clean. Cool on a wire rack and enjoy!
