Ugh. Ok. So I got my wisdom teeth pulled last week, and it was a rough few days. I’m still pretty much eating baby food and holding ice on my face. Not super fun. I opted out of pretty much every single one of the drugs they wanted to give me and haven’t taken any pain killers, so some of it may be my own fault, but my body doesn’t react well to medicine, so I’d rather just deal with my symptoms as they come, ya know?
It’s tough to be an AIP homie when you need soft food. Everyone tells you to have milkshakes, but I’m just over here drinking my boring bone broth and eating pureed cauliflower and carrots. Like, what else is there? Don’t say applesauce, because you know how I feel about fruit. No.
Poor Hudson thinks I’m the most boring mom ever because all we do is lay on my bed and type now. And walk to the freezer for cold peas. It’s not super exciting when you’re a 4 year old dog with the energy of a rocket ship inside of you. Anyone want to come walk my dog for me? Thanks. Also, I’ve had to go out in public in disguise to hide my face. Which is hard when you live in Scottsdale (where everyone looks great) and it’s too hot to really bundle up. It’s been an awkward weekend, man. Let’s move on to better things, like these Raw Paleo Chocolate Ganache Tarts.
I’ve never been a big dessert person, but every once in a while I get a hankering for some good chocolate (ladies–ya feel me?). When this happens I don’t really want a chocolate bar. That sounds boring. I usually want something more substantial and creative. Enter: these Paleo Chocolate Ganache Tarts.
Chocolate Ganache Tarts are like the Louie Vuitton of chocolate desserts. They’re the extra fancy dessert you make when you want to appear extravagant and cool. But wanna know a secret? These tarts are stupid easy. Yup! Easy as pie. So you have more time to eat them before you bring them to the place where you’re trying to impress everyone.
Enough from me. Let’s cook.
Tips for making these Raw Paleo Chocolate Ganache Tarts:
Use these silicone molds on Amazon. They make all the difference!
Raw Paleo Fudge Tarts with Chocolate Ganache
- 1 cups cashews
- 1.5 cups medjool dates if the dates are dry/tough, soak in a bowl of warm water for 30 mins before making these
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 1 can coconut cream chilled so the creme separates (discard the water/thin part)
- 1/2 cup paleo/vegan chocolate chips Lily's or Enjoy Life.
- chocolate chips or 1/2 a chopped chocolate bar for topping
Place cashews in the food processor and process until finely ground.
Add the dates to the food processor and process until a smooth mixture forms
Add the cocoa powder, and sea salt and pulse to combine.
Spread crust mixture into mini tart molds and press to flatten. Place in the fridge to chill while you make the ganache.
Place chocolate chips and coconut cream in a saucepan over low heat, reserving a tiny bit of the coconut cream for topping. Stir until chocolate chips melt into the coconut cream and are thoroughly combined, about 10 minutes.
Remove from heat and allow to cool for 5 minutes, then pour into the tart molds.
Chill for 1-2 hours, then top with extra coconut cream and chocolate pieces. Serve and enjoy!
