Hey friends— how are you doing? I know the world has gone a bit crazy out there and that we all have legitimate reasons to feel uneasy or anxious right now. I hope you’re healthy, home, and reminding yourself to take plenty of deep breaths throughout the day.

 

It’s been tough to be quarantined alone so far away from my family right now, but I’m keeping busy with work, drinking lots of tea and coffee, cooking the veggies I can find, and snuggling a little extra with my doggie. I’m thankful that I work remotely and that I still have a few revenue streams to get me through for now. It does make me sad to see what’s happening in the restaurant world–an industry near and dear to my heart. Hopefully, the coming weeks will show a significant flattening of the curve and our local businesses can have a fighting chance to stay in business.

Tahini is one of the few things I have here in the house to get creative with so it’s been making its way into everything–and I mean everything. Coffee, brownies, salads, chicken, cauliflower rice, sweet potatoes. I don’t know how I’m going to make it past this quarantine after I run out–that’ll be a sad day for sure.

 

Tips for making Tahini Hazelnut Iced Coffee:

    • Use good, strong iced coffee that is pre-chilled, or a coldbrew (just make sure it’s hazelnut.)
    • Add a pinch of salt if your tahini is salt-free. It helps boost the flavor!
    • Use a full-fat coconut milk or a creamy cashew milk.

Hazelnut Tahini Iced Coffee

INGREDIENTS

  • 2 tablespoons tahini
  • 2 tablespoons honey
  • 2-3 tablespoons hot water
  • Ice
  • 2 cups brewed hazelnut coffee chilled
  • 1 cup coconut milk or milk of choice
  • optional: whipped coconut cream and hazelnuts for topping

INSTRUCTIONS

  1. Whisk together tahini, agave, and hot water until smooth and dissolved.
  2. Blend chilled coffee with the tahini sauce in a blender to combine, then divide between two glasses with ice cubes.
  3. Top each coffee with half a cup of milk and enjoy!
